Urodził się jako Saul Feldman na Brooklynie, Nowy Jork, 12 września 1910 roku, a nazwisko panieńskie jego matki brzmiało Sowalski. Edward Fields, producent wykładzin oraz Freddie Fields byli jego braćmi. Ich ojciec zmarł w wieku 39 lat.
Grał na klarnecie i saksofonie tenorowym w zespołach w czasie studiów. W 1931 roku grał w Roseland Ballroom . W 1933 roku poprowadził zespół, który grał w Grossinger's Catskill Resort Hotel. W 1934 roku zastąpił Jacka Denny'ego w orkiestrze podczas występów w Hotel Pierre w Nowym Jorku . Opuścił Hotel Pierre i przyłączył się do objazdowej grupy z tancerzami, Veloz and Yolanda . W 1936 roku dostał kontrakt w chicagowskim Palmer House ,z którego koncerty były transmitowane w radio.
Dźwięk wydmuchiwanych bąbelków w saturatorze stał się jego znakiem firmowym, który otwierał każdy z jego koncertów.Zaproponował konkurs dla fanów w Chicago na nową nazwę dla zespołu Fieldsa, zgodnie z nowym brzmieniem. Słowo "falujący" zasugerowano najczęściej,stąd w nazwie bandu "Rhythm Rippling".
W 1936 r. otrzymał kontrakt płytowy z Bluebird Records . Jego hity m.in. "Cathedral in the Pines", "Did I Remember?" i " Thanks for the Memory ". W 1937 roku Fields zastąpił Paula Whitemana w jego audycji radiowej o nazwie The Rippling Rhythm Revue z Bobem Hope jako spikerem. W 1938 roku Fields i Hopewystapili w swoim pierwszym pełnometrażowym filmie, The Big Broadcast of 1938 .
W 1941 roku Fields dokonał reorganizacji zespołu wystepując bez sekcji dętej. "Shep Fields and His New Music",występował z udziałem wokalisty Kena Curtisa . Powrócił do "Rippling Rytm" w 1947 roku.
Grupa rozpadła się w 1963 roku.Fields przeniósł się do Houston w Teksasie , gdzie pracował jako disc jockey . Później pracował w Creative Management Associates ze swoim bratem Freddie w Los Angeles . Zmarł 23 lutego 1981 roku w Cedars-Sinai Medical Center w Los Angeles na zawał serca . On został pochowany na Mount Hebron Cemetery w Nowym Jorku.
